Festive Christmas Cassata

This is a bit of a “cheats” version because you use store-bought ice-cream. It is however a very convenient and quick recipe for that busy Festive Season.


  • 2 l good quality vanilla ice-cream (slightly melted)
  • 1 Cup of chopped candied fruit (choose a colourful mix)
  • 1/4 Cup glacé cherries
  • 1 Two-finger Kit Kat chopped
  • 1/4 Cup Amarula (more if you like!)
  • 1 Cup warm Earl Grey Tea

  1. Soak the fruit in the tea until softened.
  2. Drain off tea.
  3. Place slightly melted ice-cream in a mixing bowl and gently fold in all the other ingredients.
  4. Grease a large loaf tin and line with baking paper.
  5. Spread the ice-cream mixture into the tin and freeze.
  6. Slice and serve.
