Festive Christmas Cassata
This is a bit of a “cheats” version because you use store-bought ice-cream. It is however a very convenient and quick recipe for that busy Festive Season.Ingredients
- 2 l good quality vanilla ice-cream (slightly melted)
- 1 Cup of chopped candied fruit (choose a colourful mix)
- 1/4 Cup glacé cherries
- 1 Two-finger Kit Kat chopped
- 1/4 Cup Amarula (more if you like!)
- 1 Cup warm Earl Grey Tea
- Soak the fruit in the tea until softened.
- Drain off tea.
- Place slightly melted ice-cream in a mixing bowl and gently fold in all the other ingredients.
- Grease a large loaf tin and line with baking paper.
- Spread the ice-cream mixture into the tin and freeze.
- Slice and serve.
