Macadamia nut and kale pesto

This is a wonderful and healthy alternative to regular basil pesto. The macadamia nuts give it a really creamy flavour.
It is important to toast the nuts to get the best out of them.

Ingredients • 3 cups kale
• ½ cup toasted macadamia nuts
• 4 tbsp grated Parmesan cheese
• 2 small garlic cloves
• 2 tbsp lemon juice
• ⅔ cup extra-virgin olive oil
• ½ tsp sea salt
• A few cracks of pepper

Place all ingredients in a food processor and blitz until desired consistency, smooth or slightly chunky.
Serve as a dip at a summer al fresco lunch or drizzled over oven-roasted vegetables.
