Warm Couscous Salad with Roasted vegetables

If you want to make this dish on the fire, you can roast the veggies in a cast iron pot with a flat bottom over the coals and then also put a few coals on the lid.
Serves 8.

Ingredients

Roasted vegetables:
  • 2 red onions cut into quarters
  • 6 baby marrows, sliced
  • 1 each red and yellow peppers, seeded and cut into pieces
  • ½ butternut, peeled and cubed
  • 6 brown mushrooms, sliced
  • 20 cherry tomatoes
  • 5-6 whole garlic cloves
  • Cauliflower/broccoli flowerets or green beans, snow peas optional
  • 4 rosemary sprigs
  • olive oil
  • balsamic vinegar
  • 250 ml couscous
  • 1 tbs Ina Paarman chicken stock powder dissolved in 250 ml boiling water
  • 30 ml butter
  • 6 sundried tomatoes in vinaigrette, roughly chopped (Ina Paarman)
  • 80 ml vinaigrette (from Ina Paarman Sundried Tomatoes)
  • 60 ml basil pesto
  • 2-3 feta cheese rounds
  • 100 ml unsalted cashew nuts – roasted (optional)

Instructions
  1. Preheat the oven to 200°C.
  2. Arrange all the vegetables and rosemary sprigs in a single layer in an oven dish and drizzle with olive oil. Season with sea salt flakes and freshly ground black pepper. Roast for about 40 minutes, or until the vegetables are done but still crisp.
  3. Sprinkle with a little balsamic vinegar and set aside in a plastic bowl. Do not wash the oven dish – we want that yummy stuff on the bottom of the dish!
  4. While the veggies are in the oven, put the couscous and a blob of butter in an ice cream container, pour over the hot stock, cover with the lid. Let it stand for 20 minutes. Shake the container. Stir in the sundried tomatoes, vinaigrette, and pesto to make the couscous moist and fragrant.
  5. Spoon the couscous into the “dirty” veg roasting dish and place vegetables on top of the couscous. Crumble a little feta and sprinkle the nuts over the veg.
  6. You can now keep the dish in the fridge until you need it. Heat through in the oven before serving. The feta must just start roasting.
