Thai Chicken on the Braai

Method

Combine the coriander, ginger, garlic, lemongrass, chili, soy sauce, fish sauce, olive oil and sugar in a bowl and mix well.

Add the chicken and the marinade to a Ziplock bag and marinate for at least 3 hours or even better, overnight. Remove from plastic bag.

Braai the chicken over medium coals for 30-40 minutes until it is well cooked throughout and no longer pink. Season with salt and pepper to taste.

Serve the chicken on a platter and top off with fresh coriander leaves.
