Flaming Gemsbok Fajitas

For the Marinade

For the Guacamole

For the Meat

Method

Heat a bit of olive oil and butter in a pan over the fire.

Sear your meat in the sizzling hot pan.


Do not overcook the meat strips – you just want to sear the meat.

Add the onion and peppers and fry until they are slightly cooked.

Pour the tequila over the mix and set alight over the fire.

Sprinkle with fresh, chopped coriander leaves.

Serve the hot fajita mix in tacos and top off with guacamole, grated cheese, and a dollop of sour cream.
