Fruit Kebabs - barbequed

Method

Thread the assorted fruit pieces onto the soaked wooden skewers, alternating the fruits to create colourful combinations.
Leave a little space between each piece to allow for even grilling.

In a small bowl, whisk together the honey, lime juice, oil, cinnamon, and a pinch of salt until well combined. Brush the fruit kebabs generously with the prepared marinade. Ensure that all sides of the fruit are coated.

Let them marinate for about 15-20 minutes to infuse the flavours.

Preheat your BBQ grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

Place the marinated fruit kebabs on the hot grill. Grill for 2-3 minutes per side or until you see grill marks and the fruit begins to caramelize and soften slightly. Be gentle when turning the kebabs to avoid breaking the fruit.

While the kebabs are grilling, make the coulis:

Cut the passion fruits in half and scoop out the pulp into a bowl.

Add icing sugar to the passion fruit pulp and stir well to combine.

Taste and adjust the sweetness if necessary.

Once the fruit kebabs are grilled to your desired level of caramelization, remove them from the grill. Drizzle the passion fruit coulis over the grilled fruit kebabs or serve it as a dipping sauce on the side. Garnish with fresh mint leaves or a sprinkle of powdered sugar, if desired.

Serve with vanilla ice cream or just cream.
