(This quantity will marinate about 1 kg of steak)
Combine all the ingredients in a mixing bowl.
Add steak to the marinade and leave for at least
an hour.
Cook on the coals but watch that the sugar
doesn’t burn.
I like to marinate a whole fillet or thick slices of sirloin
before they go onto the coals.
The only problem is that I never remember to do
it in time for it to sit overnight. Using kiwi is a sneaky little shortcut for
this problem. Kiwi contains an enzyme that breaks down proteins, so this
marinade tenderises your meat in no time. You don’t actually taste the kiwi,
but it has its purpose.
I used this marinade with an Oryx Steak – divine! I totally recommend this marinade for any steak.
