This is a very convenient and quick recipe for that busy Festive Season.

Method

Soak the fruit in the tea until softened. Drain off tea. Place slightly melted ice-cream in a mixing bowl and gently fold in all the other ingredients.

Grease a large loaf tin and line with baking paper. Spread the ice-cream mixture into the tin and freeze.

Slice and serve.

Tip from Henriette

I used rooibos tea instead of earl grey tea. To create a child-friendly version I used ¼ cup of the drained tea instead of Amarula.
