This is a fresh and easy salad to make in summer – enjoy!
Method
Bring a large pot of salted water to the boil and cook the pasta until al dente. Drain.
Meanwhile, in a large pan, heat the olive oil over medium heat. Add the garlic and tomatoes and cook for about 5 minutes, stirring occasionally, until the tomatoes are softened.
Stir in the corn, raise the heat slightly and cook about 5 minutes until the corn is heated through and golden. Season with salt, to taste.
