This is a wonderful and healthy alternative to regular basil pesto. The macadamia nuts give it a really creamy flavour; it is important to toast the nuts to get the best out of them.
Method
Place all ingredients in a food processor and blitz until desired consistency is reached, smooth or slightly chunky.
Serve as a dip at a summer al fresco lunch or drizzled over oven-roasted vegetables.

I substituted the kale with spinach. It tasted delectable.
