I’m really not big on mixing fruit with savoury flavours, but somehow this combination just works like a dream. It is excellent as a summer lunch; give it a try. Delicious when served with crusty ciabatta.
Method
Soak sliced onions in lukewarm water for a couple of minutes to get rid of the strong taste.
Assemble salad, starting with baby spinach and cucumber.
Follow with onions, shaved smoked game, strawberries and crumbled gorgonzola, and then mint.
Grind cracked black pepper over the top and finish with balsamic reduction.
