So pretty and perfect for
the month of love. . .
Pre-heat oven to 150°C (130°C fan oven).
Place egg whites into bowl of electric mixer.
Using the balloon whisk, whisk the egg whites until they have doubled in volume and hold a peak.
Add sugar one tablespoon at a time, ensuring that it incorporates completely before adding the next. Whisk until egg whites are glossy.
Drop 4 to 5 circles of the meringue mixture onto an oven tray covered with baking paper. Repeat using a separate baking tray until mixture is finished.
Using a tablespoon, shape the meringues using a swirling motion.
Dip skewer into food colouring and gently swirl pink dye into each meringue to create a marble effect. Using the back of a tablespoon, continue to swirl dye, to create a more blended effect.
Place meringues in the oven. Bake for about 1 hour until they are crisp, lift off the paper easily and make a hollow sound when tapped. Switch off oven and leave meringues in the oven with the door slightly opened, to cool completely (about 60 to 90 minutes).
Serve as a treat to your loved one.
I tested this recipe with sugar as well as castor sugar and both worked perfectly.
I baked it in my gas oven (with fan) at 120°C. Simply divine!
