In a large bowl, cream the butter
and sugar until fluffy. Beat the egg and extracts together. Combine the flour, bicarb and salt.
Gradually add the creamed mixture together and mix well.
Using a cookie press fitted with the
disk of choice, place dough 2 inches apart onto ungreased baking sheets. If
desired, sprinkle with coloured sugar. Bake at 180°C for 7-9
minutes or until edges begin to brown. Cool on wire racks.
Having no cookie press, I rolled out the dough on a floured table and used cookie cutters.
