Detox cauliflower salad with chickpeas

This is a delicious and easy recipe, that even the children can help prepare

Method

Preheat the oven to 200° C. Place the chickpeas on a baking sheet. Drizzle with olive oil and sprinkle with chilli powder, salt and pepper to taste. Roast for about 20-30 minutes until crispy and browned.  

Working in batches, run the cauliflower florets through a food processor until you get a couscous consistency.  

Shake up all the ingredients in a jar or whisk together. Taste and adjust where needed.  

Toss everything together and there is your salad.
