Ingredients
For the Pesto
Rocket pesto is one of my favourite stand-by items. You can spread it on crostini’s, drizzle on top of tomato and mozzarella salad or toss it into hot pasta.
Method
Place all ingredients in a blender and blend until smooth. You might have to give it a stir now and then.
Tip: Make up a big batch, spoon into suitable containers, add enough olive oil to cover the top and pop into the deepfreeze until needed.
Tip from Gerty
I substituted half of the rocket with parsley, but still got that distinctive peppery taste rocket is so well-known for.
